In July, northern Shanxi is lush with vegetation, dotted with swaying potato blossoms, creating a scene of vibrant beauty and ever-changing scenery.
At Shanxi Malindang Agricultural Technology Co., Ltd. in Yuyang District, Yulin City (hereinafter referred to as "Malindang Company"), the author observed a bustling construction site: workers were busy installing roof panels atop the towering workshop, while engineering vehicles shuttled back and forth. Stepping into the workshop, engineering technicians could be seen either positioning sophisticated potato starch-processing equipment, arranging cable lines, or assembling starch-drying machinery—each task meticulously coordinated. The factory construction is currently underway with intense energy and seamless organization.

Chen Jun, General Manager of Malindang Company, said that as of now, three raw-material pools capable of holding 15,000 tons each have been completed. Additionally, the workshop and warehouses are nearly finished. The next phase will primarily focus on ensuring all equipment is fully ready and properly installed, with completion expected around August 20. Following installation, equipment debugging will commence, leading to trial production in early September.

Chen Jun explained that establishing a large-scale potato starch deep-processing enterprise in Yuyang District wasn’t a spur-of-the-moment decision—actually, as early as 2020, he and his team had already begun scouting potential locations and conducting nationwide surveys of the potato starch industry. In 2021, they officially registered the Malindang Company, and construction officially kicked off this past spring. By autumn, when the potatoes are harvested, they plan to begin trial production.
Located at 38 degrees north latitude, Yulin is widely recognized in the industry as a golden region for potato cultivation. The area boasts significant temperature differences between day and night, a cool climate, abundant sunlight, and rich, fertile soil. These exceptional natural conditions provide the perfect environment for potato growth, resulting in potatoes with high dry matter content, attractive shapes, and excellent taste—making Yulin one of China's premier production areas for high-quality commercial and processing potatoes. Today, the city’s total potato planting area remains steady at 2.6 million mu, yielding over 3 million tons of fresh potatoes annually, with an annual output value nearing 6 billion yuan.
In recent years, Yuyang District has vigorously supported and promoted the development of the deep-processing potato industry. Chen Jun said that, in response to the government's call, he decided to build a large-scale potato starch processing enterprise locally. The first-phase project has already introduced one 80-ton potato starch production line manufactured by Sino-Food Machinery Co., Ltd., and plans are underway to later establish a potato protein extraction workshop, as well as workshops for drying potato residue fibers, along with facilities to produce potato starch-derived products such as cellophane noodles, translucent rice sheets, and spicy-sour instant noodles.
Industry experts point out that, this year, after Ma Lingdang Company begins production, it will bring multiple benefits to local potato farmers in terms of increased income, as well as to the high-quality development of Yulin City's potato industry.
First, it addresses the challenge of "three types of potatoes," helping potato farmers increase their income. The Yulin region is a major production area for high-quality commercial potatoes nationwide. Each year, a significant amount of mechanically damaged, misshapen, and small potatoes—collectively known as the "three types"—is severely wasted, resulting in considerable losses for farmers. With the completion and operation of the starch-processing plant, these "three types of potatoes" can now be fully collected and utilized, directly boosting farmers' earnings.
Second, it boosts employment. From raw material procurement and production processing to product sales and other stages, significant labor is required at every step. The Matindang Company can provide numerous direct employment opportunities for local residents, including production workers, technicians, managers, sales personnel, and more. Additionally, it helps stimulate the growth of upstream and downstream industries such as potato farming, transportation, packaging, and warehousing, thereby creating even more indirect job opportunities.
Third, we are extending the agricultural value chain. The Matindang Company has transformed potatoes from mere agricultural products into industrial ones, enabling local processing and conversion of agricultural goods. This move not only lengthens the agricultural value chain but also boosts the added value of farm produce, shifting the region’s economic landscape away from a reliance on primary agricultural production. As a result, it fosters a transition toward a more diversified industrial structure with higher value-added opportunities.
Fourth, it helps boost rural revitalization. The completion and operation of the Ma Lingdang Company will not only absorb Yuyang District's "three types of potatoes" but also extend its influence to drive up incomes for potato farmers in counties and cities such as Jingbian, Hengshan, Shenmu, Jiaxian, Mizhi, and Zizhou, thereby enhancing rural economic vitality and paving the way for comprehensive rural revitalization.
Chen Jun is full of confidence about future development: First, Yulin potato starch boasts excellent qualities—large particle size, high viscosity, low gelatinization temperature, exceptional transparency, strong water absorption, and rich trace mineral content—making it a significant addition and valuable contribution to the national potato starch market. Moreover, the deep-processing industry will undoubtedly give a powerful boost to Shaanbei region’s potato industry, helping it shift from a purely agricultural model toward a more diversified approach that integrates planting, processing, and sales.

Editor's Note: In 2024, China’s actual total potato starch production surpassed the one-million-ton mark for the first time—a statistic that is both significant and encouraging for the industry. However, sluggish consumer demand has kept more than 100,000 tons of excess starch lingering in the market, continuously weighing down and depressing the overall sales price of potato starch— a trend that has persisted from last autumn until today.
